Dominique Ansel, the baking genius behind the Cronut craze, is now offering avocado toast ice cream sandwiches, a dessert that looks and tastes a bit like the stereotypical millennial brunch staple. Made with two flavors of ice cream and a cookie instead of toasted bread, though, this particular avocado toast couldn't be confused with a 'healthy' meal choice. Ansel starts with a shortbread cookie, which he spreads with a ricotta mascarpone ice cream followed by a green avocado olive oil ice cream. On top is dragon fruit, freeze-dried raspberry pieces (which look like the red pepper typically sprinkled on avocado toast), sea salt, and a drizzle of olive oil. Perhaps most impressive, though, is the way it is all masterfully arranged to look like avocado toast, with the avocado-flavored ice cream sliced and fanned out to look like the fatty green fruit.
