Milk is enjoying a renaissance
Milk is in various guises is now appearing in forms that we didn't recognize as children. As cultures collide and preferences change, this most basic dietary staple has been getting a makeover. We've already written about nut milks, camel milk cocktails, and milk from grass-fed cows. Now there's Goats Milk Kefir from Spain (pictured), a drinkable yoghurt/milk hybrid by a company named Beee that's made from organic skim goats milk. Alternative milks, it seems, are able to several trends at once, including those regarding healthy lifestyles, locally-sourced products, and the desire for specialty products and "connoisseurship."
